this looks pretty yummy, I never saw this post until now! I should try that one day. My mom used hard boiled egg in the middle, with a tomoto-onion sauce, which I miss having also

Hmm. Hard boiled egg is an interesting idea. Creamy yoke : ). I eat them with gumbo.
My next one will be mashed potatoes with gravy bombs.
