Made this the other day and though I'd share since it was amazing.
I took a small pack of thick center cut bacon(use the good stuff, trust me) and fried it up. Drained most of the grease from the pan when it was done but not all of it. Threw some fresh garlic and EVOO in the pan with some sun dried tomatoes I had sitting in EVOO. I let those cook down a bit then I added 3 large chicken breasts I had chopped up. Seasoned them with salt & pepper and let them cook. While they were cooking I boiled my noodles and had them drained and back in the pan. Once the chicken was almost finished I cut up the bacon and threw it back in with the chicken. Once the chicken finished cooking I threw it in with the noodles. Then put some more garlic and a few more Sun dried tomatoes in the pan the chicken was in along with about 2 cups of heavy cream along with some fresh parsley. Once that came up to temp I put in about half a cup of each: Asiago, Romano & Parmesan cheeses. Seasoned with salt & pepper and let that thicken up. If the sauce is too thin add some more cheese, too thick to where the cheese isn't melting then add some more heavy cream. Also you can change the ratios of the cheeses to fit your taste. If you like something a little saltier then go for a bit more Romano and if you're like me and like the really aged deep cheesy taste go for more asiago. Once the sauce is thickened up throw it in the pan with the noodles and chicken. Serve up and throw some more cheese & parsley on top to garnish. Simple, easy and you only used 2 pans to cook with.
