fettuccine alfredo

Alfredo Sauce
1 package (8ounces) cream cheese
1 cup milk
4 tablespoons butter
1/2 cup grated parmesan cheese
1/2 tsp granulated garlic
combine milk, butter, and cream cheese in a medium saucepan and place over low heat. Once the cream cheese starts to melt, you can add the parmesan. doesnt take as long to melt the parm cheese. Heat until ingredients are melted and well combined, stirring frequently, approximately 15 minutes.

makes: 2 1/2 cups


I make a double batch. then I cooked up 1 1/2 pounds of boneless skinless chicken breasts (cut into bite size pieces) in a large skillet. When the chicken is done, i add cut up broccoli. (fresh tops cut again into bite size pieces). when broccoli is tender, drain off any juice. in the large skillet, add the alfredo, allow it to finish melting the cheese. should finish about the same time the fettecini does.


In place of chicken and broccoli, I have also used chuck steak, onion, cherry tomato (cut in halves) and bacon.

Very similar to my recipe dugan. Although I dont use cream cheese. I use heavy cream, fresh parmesean cheese, nutmeg and butter. When I heard about the nutmeg I was hesitant at first but when I added it in there it gave it that subtle spice that makes alfredo sauce sooo good. lol

mmmmm I love making Alfredo sauce also! I like to use fresh basil or sweet basil (from my spices) and love lots of garlic, key to good cooking! I add mushrooms and chicken to my recipe, delish! I wonder how I missed some of the posts lately. I guess I haven't looked through the forums thoroughly! mmmmmmmm FOOOOOOOOOODDDDD!!!!!!!
